Bone-in Pork Chops with Mango Salsa

  • Bone-in pork chops
  • Maldon salt (recommended)
  • Freshly ground pepper
  • Cumin
  • Paprika
  • Seasoned salt (optional)
  • Butter
  • Olive oil
  • Fresh thyme
  • Fresh rosemary
  • Fresh garlic
  • Fresh mango
  • Red chili
  • Cilantro
  • Scallions
  • Lime

Method:

  1. Season the pork chops with a blend of Maldon salt, pepper, cumin, paprika, and, if you prefer, a touch of seasoned salt.
  2. Heat a combination of butter and olive oil in a pan until the butter melts and begins to foam.
  3. Add diced garlic along with rosemary and thyme stalks, allowing them to cook until fragrant, releasing their aromatic oils.
  4. Cook the pork chops in the infused butter and oil, searing for 4-7 minutes on each side, until they develop a golden brown crust and are cooked through to an internal temperature of 145°F. Baste the pork frequently by spooning the pan juices over the meat to keep it moist and flavorful.
  5. Prepare the salsa by dicing fresh mango and chopping cilantro, scallions, and chili. Squeeze fresh lime juice over the mixture, then finish with a drizzle of olive oil and a pinch of salt.
  6. Serve the pork chops topped with the vibrant mango salsa, and enjoy the harmonious blend of flavors.
