Miso Tarte Tatin: A Sweet and Savory Fall Delight

As the weather cools and apple season hits its peak, there’s no better time to experiment with warm, comforting desserts that offer a twist on the classics. This Miso Tarte Tatin is my latest favorite—a playful blend of caramelized apples and a hint of miso that elevates the traditional tarte tatin into something unique and unforgettable.

With a rich caramel-miso sauce coating tender apples and a golden puff pastry crust, this dish brings a beautiful balance of sweet and salty with every bite. It’s easy to make and perfect for a cozy night in or a small gathering with friends. Let’s dive into this fall-inspired dessert!

Miso Tarte Tatin Recipe

Serves 2-4

Ingredients:
  • 3 apples, peeled, cored, and sliced (cut each quarter into three pieces)
  • 6 tablespoons butter
  • Brown sugar (enough to create a caramel sauce)
  • 1 tablespoon miso (or to taste)
  • Store-bought puff pastry
  • Milk (optional, for glazing)
Instructions:
  1. Prep the Apples: Peel, core, and cut the apples into smaller wedges (cut each quarter into three pieces). This will help them cook evenly and create a gorgeous layered effect in the tart.

  2. Make the Sauce: In a pan, melt about 6 tablespoons of butter, add brown sugar, and stir in a spoonful of miso. Let it all melt together to create a rich caramel sauce that’s both sweet and savory.

  3. Cook the Apples: Add the apple slices to the caramel sauce and cook for about 10 minutes until they’re softened and coated in all that buttery goodness.

  4. Prepare the Pastry: Cut your store-bought puff pastry to fit the top of your ramekin. Place the apple mixture into the ramekin and cover it with the puff pastry. For extra crispiness, glaze the top with a little milk (optional).

  5. Bake: Pop the ramekin in the oven at 375°F (190°C) for about 20 minutes or until the pastry is golden brown and puffed up.

  6. Flip & Serve: Carefully flip the tart out onto a plate so the apples are on top. The sight of those caramelized apples glistening on top of the golden crust is pure magic.

Serve warm and enjoy the perfect balance of sweet and salty with every bite.

Why This Dessert Works

This Miso Tarte Tatin combines the familiar comfort of caramelized apples with the unexpected depth of miso. The miso adds a subtle umami layer that enhances the sweetness of the apples, creating a dessert that’s complex but still feels homey. The puff pastry gives it that perfect flaky texture, making each bite feel indulgent yet refined.

This tarte tatin is perfect on its own or with a scoop of vanilla ice cream on the side. It’s a dessert that invites you to slow down, savor the flavors, and appreciate the beauty of fall’s best ingredients.

Experiment with Your Own Twist

If you love experimenting with flavors, try adding a pinch of cinnamon or cardamom to the caramel sauce for a spiced touch. You can also swap apples for pears if you want to try a different fruit. The recipe is simple enough to play around with but delicious as it is.

So, whether you’re watching the leaves change or cozying up with a blanket, this Miso Tarte Tatin is sure to bring warmth and comfort to your fall season. Enjoy every decadent bite!
